New Maple Syrup Season
This one will go down in the books as our earliest syrup season in the twenty plus years we have been producing maple syrup.
We finished tapping on February 20 and collected enough sap to fire up the evaporator for the next day. It was a great sap run thanks to the mild temperatures, lasting right through the night. As the outside temperatures rose sap poured in and kept filling the tanks – we cooked all day!
What a great start to the season. The weather has been so unpredictable all winter that we never know what to expect but so far we are off to a great start for the 2016 syrup season.
Very cold weather has currently put sap harvest on hold but the forecast is promising temperatures will improve by the weekend for another great sap run.

DID YOU KNOW:
Sap is temperature dependent since it is about 98% water (2% sugar). Ideal sap temperatures would be above freezing though the day such as +5 celcius then below freezing through the night such as -5 celcius.
